Fitzemeyer & Tocci provided full MEP/FP engineering services for the construction of a state-of-the-art sake brewery in Hyde Park, NY, developed for the world-renowned Asahi Shuzo company of Japan.

The project involved transforming a 60,000 SF former grocery store into a cutting-edge brewing facility, featuring process areas, environmental rooms, and a spacious tasting/shop area. Additionally, a separate rice polishing building was constructed on-site to support the intricate sake production process. Each space was meticulously designed to accommodate precise polishing, steaming, washing, and fermentation requirements.

F&T collaborated closely with Pelli Clarke Pelli Architects and the Asahi Shuzo brewery team in Japan to ensure all infrastructure and environmental systems met the strict specifications necessary for traditional sake brewing.
